Mostly healthy dishes to brighten meals during Lenten season

Spring is here and so is the Lenten season, a period of fasting for some Christians, including the Eastern Orthodox and Western Catholics. Some think of Lent as sort of spiritual spring-cleaning. It also is a fine opportunity to cleanse the body of some of the heavy, fatty foods we might have indulged over these past winter months.
